No storebought applesauce in Brazil, so I peeled 3 apples thickly to make the juice with, then cut up the rest of the apples and cooked up a small batch of applesauce. My 18-month-old had the time of her life "helping" me mix the dry ingredients. She also--much to my dismay--helped herself to a tiny handful of batter out of the muffin tin, and was very unhappy when I took it away to bake! Your recipe is wonderful and I'm grateful that you always show a video with them. I, too, have a Vitamix, which I LOVE and it was an investment for the kitchen, but is a delight when making things. Having the best kitchen tools makes everything so much easier and more fun. I had a wee bit of a problem when I started pushing out the pulp as much went into the carrot-apple juice. So, I strained it once again using a tighter mesh strainer and, voila, it was perfect. (That's why it's helpful seeing the video so I could see the thickness and consistency of your carrot pulp.) Confirming here that the muffins are delicious!<br /><br />How is the homeschooling abroad going? I'm sure your young students are learning so much getting up close and personal to the history of Europe that surrounds them.
