Healthful Carrot Muffins (Using Pulp!)
Greetings Daily Connoisseurs,
I shot this video sharing my favorite muffin recipe before leaving for my trip. I hope you enjoy it!
For my birthday this year, I received a Vitamix blender. You know I resisted buying one of these for so long, but what a wonderful surprise to receive one as a gift! I have truly been loving it, making smoothies, soups and juices almost every day. The best thing about it is that it's easy to feed vegetables to my children (even the baby) because they love the juices and smoothies I make, even though they often contain kale, spinach and carrots!
I will frequently make a carrot juice with 1 cup water, 3 carrots and one apple. I like to keep a lot of the fiber in the juice, but I will also extract a lot of it too. I hate to throw the juice pulp away and waste all of that amazing fiber, so I researched a few healthful muffin recipes and modified them to come up with this one. These muffins are delicious. My children gobble them up and I love them too! I make a batch of these after making juice. They are so easy and I put them in the freezer. Just pull out the muffins you want the morning of. I hope you enjoy today's video.
Healthful Carrot Pulp Muffins
makes 12
Ingredients:
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 tablespoons butter, melted
1/2 cup honey
1 egg, beaten
1 teaspoon vanilla extract
1 cup unsweetened applesauce
1 cup carrot juice pulp (I use the leftover pulp from making my carrot apple juice in the Vitamix )
Preheat oven to 350 degrees F. Mix flour, baking soda, cinnamon and salt in a large mixing bowl. Mix in the melted butter, honey, beaten egg, vanilla extract, applesauce and carrot juice pulp. Mix well. Divide in muffin cups sprayed with baking spray or lined with muffin cups. Bake for 18 - 20 minutes. Serve warm with a dab of butter. Yum!

Jennifer,
As I'm writing this i am again evacuated from my home in Northern California. The same thing happened two years ago. Our home is in danger from the wildfires. 14 families from my daughter's school have already lost their homes. I know at least half of these families personally. Your beach chat was a welcome distraction from my anxiety and grief. And I would like to say that I now have a different attitude toward housekeeping. Home keeping is a privilege not a chore. About homeschooling, if my children's schools don't reopen soon, we may be homeschooling again too. I love you too, Jennifer. Thanks for being your generous self!!
Warm best,
Alexandra
Hi Alexandra, I am praying for you and all of the families affected by the horrible northern California fires. I am glad that you and your family are safe. Thank you for your wonderful participation in the blog. I always look forward to your comments!

I really like this recipe, especially the fact that there isn't any refined sugar in it. I don't have a means to make pulp, so am wondering if you think shredding my carrots and apple will create a somewhat similar muffin? Thanks.
ReplyDeletePam Long here is a recipe that uses shredded carrots and apple-I've been making these for years! https://www.yummyhealthyeasy.com/sunshine-muffins/
ReplyDeleteThank you Karen, I look forward to trying your recipe.
ReplyDeleteI just made your carrot muffins, which came out of the oven moments ago, and I enjoyed mine with a cup of "Get Gorgeous" rooibos tea. Your recipe is wonderful and I'm grateful that you always show a video with them. I, too, have a Vitamix, which I LOVE and it was an investment for the kitchen, but is a delight when making things. Having the best kitchen tools makes everything so much easier and more fun. I had a wee bit of a problem when I started pushing out the pulp as much went into the carrot-apple juice. So, I strained it once again using a tighter mesh strainer and, voila, it was perfect. (That's why it's helpful seeing the video so I could see the thickness and consistency of your carrot pulp.) Confirming here that the muffins are delicious!
ReplyDeleteHow is the homeschooling abroad going? I'm sure your young students are learning so much getting up close and personal to the history of Europe that surrounds them. Have fun!
Thank you for this recipe. I just made a batch this afternoon and they were a hit! No storebought applesauce in Brazil, so I peeled 3 apples thickly to make the juice with, then cut up the rest of the apples and cooked up a small batch of applesauce. My 18-month-old had the time of her life "helping" me mix the dry ingredients. She also--much to my dismay--helped herself to a tiny handful of batter out of the muffin tin, and was very unhappy when I took it away to bake! I especially appreciate that they don't take any sugar. <3
