What I Eat for Breakfast | Jennifer L. Scott



I'm sharing a typical week of breakfasts in our home. I like to eat a variety of breakfast foods: fruit, eggs, breads, oatmeal and yogurt/ cottage cheese.

This video shows a sample of what I might eat in one week. As the seasons change, so do my breakfasts... These really represent late winter/ early spring.


Turkey bacon, 1/4 blueberry muffin and cottage cheese with mixed berries


Poached eggs on whole wheat English muffin



Homemade yogurt and coconut granola with mixed berries. I use the EuroCuisine yogurt maker to make my yogurt. I will do a video on this in the future. Also, the granola recipe I truly love is from How Jen Does It.


Scrambled eggs with cheese on whole wheat English muffin with a blueberry banana chia smoothie


Cottage cheese with blackberries and a raisin energy bread bar

Homemade heart-shaped waffles with mixed fruit and whipped cream. A perfect weekend treat!

  1. I love your breakfasts! They look familiar to me as I eat very similarly. Breakfast is my favorite meal of the day. I rotate between a Greek yogurt-berry-oat bran bircher, eggs scrambled with loads of veggies, and half an Ezekiel bread muffin with a little almond butter and slivers of banana. On Sundays my husband makes me a fantastic, beautiful omelet with whatever vegetables we have on hand, and some type of cheese (often chevre), sundried tomatoes, avocado, and sriracha. It's such a treat. And I always have two cups of coffee with almond milk.....

    My children eat baked oatmeal topped with nut butter, my great-grandmother's buckwheat pancake recipe (delicious), or whole-grain waffles that I make. Sometimes I will also make a breakfast casserole for them...we have chickens, so there are always fresh, healthy eggs on hand. And my husband eats oatmeal with nut butter & almond milk & fruit every morning, except after his long run on Saturday, when I make him buckwheat pancakes.

    Starting the day with a beautiful breakfast is kind of a quotidian luxury that I enjoy. So do you, I see!

  2. Your breakfasts look so yummy! I love breakfast but, I don't generally have breakfast. I can't eat when I first get up and then it's a dash to work. So usually, I wait until lunch before I finally get around to eating something.

  3. Last summer, I bought a EuroCusine yogurt maker (with extra glass jars) at a yard sale for 5 bucks. I normally don't like small appliances that only do one thing, but in this case, I really, really like this yogurt maker! We eat yogurt every day, and not only does the cost add up -- so does all that plastic that must be recycled. It is so easy to make yogurt this way,and I love that I can control what goes into it (whole raw milk, NO sugars.) Please DO do a video on this. I think more people would make their own yogurt if they knew how easy it was.

  4. First off, I love seeing your china. The green set is my favorite! We are gluten, dairy, pork, and egg free. We make smoothies, oatmeal, gluten-free pancakes and waffles(weekends), occasionally chicken sausage links, granola, coconut yogurt parfait, but one of our favorites is gluten-free vegan baked oatmeal. I adapted the recipe from a popular local cafe that my sister worked at years ago and it is always a big hit when I take it to brunches. People can't believe it's a healthy version. Here is the recipe if you are interested:

    Vegan Baked Oatmeal
    2 c non-dairy milk
    1 c coconut oil
    4 T flax meal
    3⁄4 c water
    2 t vanilla
    2 c coconut palm sugar
    2 t baking powder
    2 t salt
    6 c g-free oats
    1⁄4 c whole flax seeds
    2 1⁄4 c non-dairy milk for serving
    2 c fruit for serving

    Preheat oven to 350. Grease a 9 x 13 pan. Make flax "eggs" by combining flax meal and water in a small bowl. Let stand for 5 minutes. Add milk and coconut oil to a small saucepan and warm to until just combined. Pour milk mixture into a large bowl. Wisk in flax "eggs" and vanilla. In a separate medium bowl, mix sugar, baking powder, and salt. Add sugar mixture to milk mixture and stir. Gradually add oats and flax seeds. Bake until golden and knife comes clean about 30 minutes. Serve warm with non-dairy milk and fruit on top.

  5. I love the post today! I enjoy healthy eating ideas and like to see the lovely presentation on your various plates. I especially like to see the portion sizes. I am always looking for ideas about how to maintain a healthy weight and like to see ideas about how the French manage it. Would love for you to address how to prepare a meal with courses, like the French do. It's a subject that is fascinating to me!

I will definitely do a separate video on how I poach eggs because my technique needs to be shared! :) Janessa, thank you for that recipe... it sounds so good. I will have to try it! Polly, I loved hearing what you and your family eat regularly. Mimi, I will do a yogurt video too at some point.   9. Your breakfasts look healthy and substantial at the same time and much like what I eat. Today, I just made some of your overnight oats for tomorrow's breakfast using dairy-free So Delicious unsweetened coconut yogurt and I added frozen cherries on top. Yes, please do a video on your perfectly-poached eggs that have the exact time and precise science behind it. I don't like runny yellow yolks, so I'll be able to adjust the time, I'm sure. I've often heard that swirling the water or using a spoon over the egg to "cook" or do the poaching is one method. I look forward to yours! The round whole wheat English muffins were a delicious accompaniment and, in fact, each breakfast entrees looked delicious. More video servings, please.

  10. I forgot to add that today I found one of your 2011 videos on making tea, "My Three Favorite Teas," when I was doing a general search for matcha green tea! Imagine my surprise seeing you in your pretty white and grey kitchen as you wore a pretty charcoal silk top and made tea, here: https://www.youtube.com/watch?v=YsbOtC5QivE I didn't discover you until 2012-13, so this was a nice surprise. I loved the metal tea canisters you had in the video so much I ordered a few.

  11. Where do you find the Raisin Energy Bread at Costco? It looks awesome, but I haven't seen it there before. Is it a certain brand? Thank you for sharing, as you gave me renewed inspiration in my breakfasts...which I definitely needed!
