In today's video I'm sharing three make-ahead breakfast ideas for Christmas morning. Many times we meticulously plan the Christmas dinner, but rarely think about the breakfast. If you feed your family a good breakfast, they are less likely to snack and ruin their appetites for the delicious Christmas dinner.
I'm sharing a hash brown casserole that can be made the night before, a slow cooker oatmeal recipe that can be made festive with select toppings, and a delicious and easy cream cheese breakfast pastry. Let's look at the recipes now.
Hash Brown Breakfast Casserole
Prep time: 20 MinCook time: 50 MinTotal time: 1 H & 10 M
Ingredients
- 1 bag shredded hash browns (20oz)
- 1 lb breakfast sausage
- 1 bell pepper, chopped (green, red or combo)
- 2 cups shredded cheddar cheese (divided)
- 8 eggs
- 1 cup of milk (add more as needed)
- salt and pepper
- 1/2 tsp season all (or favorite seasoning)
- Chopped scallions
Instructions
- Grease a casserole dish and set aside. Brown the breakfast sausage in a skillet and drain the fat. Add the hash browns to the casserole dish. Add the cooked sausage, chopped peppers, and 1 1/2 cups of shredded cheese. Stir to combine. In a separate bowl, whisk together the eggs, milk, and seasonings. Pour the egg mixture over the hash brown/ meat mixture. Add milk if it seems dry, up to 1/4 cup. Cover and refrigerate overnight. In the morning, preheat the oven to 350 degrees F. Uncover the casserole and bake in the oven for 50 minutes, or until done. Serve with the remainder of shredded cheese on top and top with scallions.
Slow Cooker Oatmeal
Ingredients
- 2 cups old fashioned oats
- 4 cups water
Instructions
- The night before, place the oatmeal and water in the slow cooker and stir. Cook on low for 8 hours. The next morning, scrape the crust off of the oatmeal. Serve with a variety of toppings. Ideas include: chocolate chips, crushed graham cracker, shredded coconut, chopped banana, berries, and brown sugar.
- The ratio for old fashioned oats to water is 1:2. If you need to make more, use 4 cups of oat to 8 cups of water.
Cream Cheese and Jam Crescent Roll Pastries
Ingredients
Pastries
- 1 package of crescent rolls
- 1/3 cup cream cheese
- 3 Tbs powdered sugar
- 8 teaspoons cherry jam (or jam of your choice)
Glaze
- 1/2 cup powdered sugar
- 3 tsp milk
Instructions
- Preheat the oven to 375 degrees F. Take the crescent rolls out of the tin, but do not unroll them. Cut the rolls into 8 slices. Place them on a cookie sheet. Press each roll slightly in the middle, keeping the outside rim higher than the dipped center.
- Mix the cream cheese and powdered sugar thoroughly. Place a dollop in the center of each pastry round. Top with a teaspoon of your favorite jam. Bake 14 - 15 minutes.
- Create the glaze by mixing together the powdered sugar and milk. Drizzle the pastries with the glaze and serve. You can make these ahead of time, but they are more delicious when served warm from the oven.

Stacie writes, "I love your 10 item updates!! You look glowing in the red dress and I love to see how excited you are about your new jumpsuit!! I remember when jumpsuits were popular in the 70's and wore alot of them then....You have inspired so many of us to curate a closet of items we love!! Recently, we purchased a new home and I was giving my friends the tour...EVERYONE of them asked me, "Where are the rest of your clothes?!" I proceeded to tell them that I subscribe to your 10 item wardrobe. Hopefully that will plant the seed:) But I can tell you, even at 60 y.o., I get SOOO excited about a new dress...God Bless you and your family...Stacie"
Thank you, Stacie! I loved reading about your friends' reaction to your small wardrobe :) Keep up the great work!

Hello - or the casserole, do you use a 9x13 pan or a smaller size?
ReplyDeleteHi Marcia, I used a 9x13, but you could use two smaller pans if you'd like to make two portions...
ReplyDeleteI am subscribed, but no longer receive emails about your blog posts. I tried resubscribing but it just says I am already subscribed. Are you no longer sending out emails. It has nothing to do with my junk box, they’re not there. Please advise
ReplyDeleteI am having the same problem!!
ReplyDeleteHi Martha and Shelly,
ReplyDeleteI'm sorry you're having that issue. Are you subscribed through feed burner? I haven't changed any settings on my end. I wonder why that is happening. I can look into other ways to subscribe to the blogposts and if I find something else, I can post it here. I know some people follow blogs through blog lovin...
Best,
Jennifer
I am having the same issue. I thought you were on a break.
ReplyDeleteI guess I’ll try to figure it out on my own. For the other two ladies who are having the same problem, I’m going to start by unsubscribing and then resubscribe. Perhaps that will work.
ReplyDeleteHi Jennifer, I just want to thank you for doing the work to make printing your recipes so easy - what a gift to your followers!!! I just printed the Pastries recipe and the Breakfast Casserole recipe. I plan to have both Christmas morning. I will think of you as I serve these yummy dishes!! Thanks again, and have a very Merry Christmas and a blessed New Year!! Your long time follower, Donna Smith
ReplyDeleteJust to let Shelly, KS and Jennifer know, I unsubscribed and resubscribed and still don’t receive the posts, therefore there is a problem that should be investigated and resolved. Obviously this is happening to other people who aren’t commenting here. I won’t be checking on this blog every day, I just don’t have the time. Maybe in the future if you figure this out. While I do understand that it’s a busy time of year, if this is a business, you’re losing customers if they’re not receiving your posts!
ReplyDeleteLet us know if you figure it out. And Happy New Year
Hi ladies,
ReplyDeleteI'm sorry you are still having that issue. I have checked the feed and it is healthy. I have updated the link in the sidebar so perhaps that will help although I know some of you said you unsubscribed and resubscribed and that didn't work. I can contact Google about the issue this week to see what they say. Stay tuned.
Donna, I'm so happy that you tried the dishes on Christmas. How did they turn out?
Best regards,
Jennifer
We tried all your Christmas recipes this year and they were a big hit! Thank you for sharing! Happy New Year to you and yours!
ReplyDeleteHi Jennifer, both the pastries and the breakfast casserole was a big hit with my family. I made the casserole the night before, of course, and having it ready to pull out the fridge and put in the oven without any further prep work Christmas morning was the dream!!! I'm very thankful for your recipes. Hope you have had a wonderful holiday season. Donna
ReplyDeleteThe casserole was a HUGE hit and so easy to customize. It's now a staple! The pastries ... SO easy and we've now made these several times with so many flavors. Great Recipes!!
