Today I'm sharing three impressive dinner recipes that are so easy to make... but don't tell anyone! :)
Slow Cooker Pot Roast
Ingredients
- 3 lb chuck roast (weight can vary depending on needs)
- salt and pepper
- 1/4 cup flour
- 1 cup broth
- 1 packet onion soup mix
- 1 onion, cut in wedges
- 4 medium potatoes, cut in large pieces
- 3 large carrots, roughly cut in large pieces
- 3 stalks celery, cut in large chunks
- 1 pint mushrooms, halved
Instructions
- Season the roast with salt and pepper, and rub extra virgin olive oil into the meat. Then sprinkle some flour on each side of the roast and rub it in nicely. In a skillet on high heat, sear the roast on both sides. About 2 minutes per side. Meanwhile, spray your slow cooker with cooking spray and add in one medium onion, chopped in wedges, 4 medium sized potatoes, peeled and chopped in chunks, carrots, celery, and mushrooms, all left in rather large chunks. You don’t want anything cut too small or it will turn to mush in the crock pot. Once the roast is seared on both sides, place it on top of the vegetables in the slow cooker. Keep the pan on medium heat, add around one cup of broth to the pan along with one packet of onion soup mix. Scrape up the brown bits from the skillet as you create this incredible sauce with all of the juices from the roast. Then pour on top of the roast. Cook on low for 8 hours or high for 4 hours. This roast is so full of flavor and is a very impressive meal to serve your family or any guests you may have. Garnish with chopped parsley, ladle the au jus on top of the roast and vegetables and enjoy.
Brie Pasta
Ingredients
- 4 large tomatoes cut into cubes
- 1 lb brie cheese, rind removed, torn into pieces
- 3 garlic cloves, peeled and finely chopped
- 1 cup olive oil
- Salt and pepper to taste
- 1 ½ lbs bow tie pasta
- 1 cup basil, torn
Instructions
- Combine the tomatoes, brie, garlic, olive oil, salt and pepper in a large bowl. Prepare this two hours before serving. Cover it and let it rest at room temperature. Then cook your pasta according to the package instructions and drain. Immediately toss the pasta with the tomato brie mixture. Add the basil. Serve right away. This dish is elegant and so delicious. A fancy vegetarian meal to proudly serve your family or guests.
Passion Fruit Mousse
Ingredients
- 1 can (15 oz) sweetened condensed milk
- 15 oz Passion Fruit juice
- 1 cup heavy cream
- Passion fruit for garnish
- mint leaves for garnish
Instructions
- Take one can of sweetened condensed milk, passion fruit juice (measure it in the condensed milk can), and one cup of heavy cream. Whisk this together for several minutes until it reaches a "whipped cream" consistency and pour in your dessert ramekins. Refrigerate overnight. When you are ready to serve them the next evening, pour some fresh passionfruit on top and garnish with mint.
- You can also freeze this dish once you whip it up and it tastes like a delightful mousse ice cream. My children preferred the frozen method best.
- Double the recipe if making for a crowd. The recipe as it is written serves 4.
