Favorite Salad Entrées | What's For Dinner?


 I'm sharing some of my favorite entrée salads in today's What's for Dinner video


These salad entrées make great standalone meals. Your kids will even love them! Thank you to ButcherBox for bringing us today's video. 



BBQ Chicken Salad

BBQ Chicken Salad

Ingredients

  • Lettuce leaves
  • 1 grilled chicken breast, chopped into cubes
  • 1/4 cup black beans, fully cooked
  • 1/4 cup corn
  • 1/4 cup black olives, sliced
  • 1 small handful of cherry tomatoes
  • 1/4 cup shredded carrot
  • 1 avocado, chopped
  • 1/4 red onion, chopped
  • 2 green onions, chopped
  • 3 Tbs cilantro, chopped
  • Ranch dressing to taste
  • Drizzle of BBQ sauce
  • Tortilla strips salad topping
  • Lime, (optional)

Instructions

  1. Combine all ingredients except for the dressing, tortilla strips, and lime. Pour desired amount of Ranch dressing over the salad and toss to fully incorporate. Drizzle each individual portion with BBQ sauce. Top with Tortilla strips. Squeeze lime juice over top. Serve and enjoy.
  2. Please note: the portions can be adjusted depending on how large or small you need to make your salad.

Ingredients

Honey Lime Vinaigrette
  • 1/4 cup fresh lime juice
  • 2 Tbs honey
  • 1 tsp sugar
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup olive oil
  • 1 Tbs apple cider vinegar

  • Lettuce leaves
  • 1 grilled chicken breast, chopped
  • 1/4 red onion, chopped
  • 1 small green apple, chopped
  • 1 orange, peeled and chopped
  • 1 avocado, chopped
  • 2 green onions, chopped
  • 1/4 cup blue cheese crumbles
  • 1/4 cup glazed walnuts and dried cranberry salad topping

Instructions

To prepare the honey lime vinaigrette
  1. Blend together the lime juice, honey, sugar, mustard, spices, salt, pepper, and vinegar. Add the oil and whisk briskly until well-blended.
To prepare salad
  1. Combine all salad ingredients in a large bowl. Top with desired amount of Honey Lime Vinaigrette dressing. Toss to coat salad with dressing. Top with extra orange slices. Enjoy!

Ingredients

  • lettuce
  • grilled chicken breast, cut in strips
  • shredded carrot
  • green onion, chopped
  • cilantro, chopped
  • mandarin oranges, drained
  • wonton strips
  • sesame dressing
  • sesame seeds

Instructions

  1. The above is a list of ingredients for the salad. Adjust the amount based on how many you are serving. Combine all ingredients except for the chicken, dressing and sesame seeds. Top with desired amount of sesame dressing. Toss to combine. Place strips of chicken artfully around the salad. Sprinkle with sesame seeds. Top with extra wonton strips. Enjoy!

Fancy Salmon Salad

Ingredients

  • 12 - 14 oz cooked salmon (3 small filets or 2 6oz cans)
  • 1/2 cup celery, finely chopped
  • 3 dates, finely chopped (optional)
  • 1/4 cup green onions, chopped
  • 1 Tbs fresh dill, chopped
  • 1/4 cup mayonnaise
  • juice of one lemon
  • 3/4 tsp seasoned salt (old bay, lemon pepper, or season-all)
  • lettuce leaves and grapes for garnish

Instructions

  1. If using fresh salmon, roast salmon in an oven at 400 degrees F with some oil, salt and pepper for 20 minutes. Allow to cool. Flake salmon off the skin and into a bowl. If using canned salmon, drain the salmon and flake into a bowl. Add the rest of the ingredients except for the lettuce and grapes. Stir to combine. Prepare each plate by laying down lettuce leaves. Press the salmon salad into a ramekin and place gently upside down on top of the lettuce until it comes out in a neat mound. Top with sliced grapes. Repeat on each plate. Enjoy.

  1. Jennifer, I like your countertop garden!🌱 I'm concerned about replacing the lightbulbs as they burn out, and have not been able to tell from the website whether Aero Garden stocks these. Do you have experience needing/finding replacements?

  3. Hi Jennifer, this is probably a silly question, but I'm not in the habit of using corn in salad, so I have to ask: do you used cooked (and cooled) frozen corn? Or canned corn? Or something else? Thanks! The salads all sound yummy. I want to try them all.
