After reading Queen Lucia, I have had curries on my mind. Can you tell? First, I made an Authentic Indian Chicken Curry and in today's video, I'm making a mild coconut chicken curry in the slow cooker. I make this dish regularly and my children love it.
Slow Cooker Coconut Chicken Curry
serves 4
4 boneless skinless chicken breasts
4 medium potatoes, peeled and chopped
1 medium onion, chopped
1 14oz can coconut milk
1 cup chicken broth
1 1/2 tsp curry powder
salt and pepper to taste
1 10oz package frozen peas, thawed
cilantro and green onion, chopped
Place potatoes and onion in the bottom of a slow cooker. Place the chicken on top. In a bowl, combine the coconut milk, chicken broth, curry powder, salt and pepper. Stir, then pour over the chicken. Cook on low for 8 hours. A half hour before the cook time is finished, add the thawed peas. Continue cooking for 30 minutes. Serve the curry over rice and garnish with cilantro and green onion. Enjoy!

Comment of the Week
On Monday's One Week of Outfits from My Ten-Item Wardrobe post, Kristie writes: This video popped up as I was sitting schlumped at my desk in my home office, still in my PJs, rather in a funk and feeling very unmotivated to start my day. It was just the gentle kick in the pants I needed to get up, put on a cute dress and a little makeup, and restart my day with a better foot forward. Thanks for the nudge :)
Hi Kristie, your comment made me smile. I'm glad Monday's video provided you with the motivation you needed!
Have a lovely weekend and I will see you all on Monday!

Jennifer, I have to thank you for all of your wonderful recipes. I've tried almost all of them, and they're always easy and delicious. Being the family chef is no easy task, but your recipes have certainly added a lot to my repertoire!
ReplyDeleteI agree with Sonya! Please keep sharing your recipes!
ReplyDeleteHa ha!! That made me laugh because I had a huge craving for Indian Tikka Marsala after hearing about all of the curries in Queen Lucia too! I have yet to find a recipe I like as much as just going to an Indian Restaurant! If you have a recipe for that I would love it! I'll try this one too!
ReplyDeleteThank you! Summer :)
I love a curry and that one looks so easy...fix it and forget it until dinner time which allows one time for some reading!
ReplyDeletethank for good posting.

Sounds delicious. Love the crock pot, even in summer. Especially in summer!
ReplyDeleteJennifer,
ReplyDeleteThanks for the recipe! It's so helpful in answering the ever-present question, "What to cook for dinner today?" Again, I will try a vegan version with chick peas in place of the chicken. Also, I will be cooking it fast instead of slow. Should be great!

Hi Jennifer!
ReplyDeleteLong time follower and reader here. I came across this advertisement today and immediately wondered what your take would be. Might be something to discuss on Teatime With Jennifer?

This looks great!
ReplyDeleteI am not a frequent commenter but have read your books and followed you for some time. A friend sent me the book, Every Frenchman Has One by Olivia de Havilland, and it is a delightful read. I feel certain that you must know it but that if you don't, well, you must! Definitely get the 2016 edition because the post-script affirms your own writing about French culture. It was very funny and a little bit like A Year in Provence (I only saw the series).
