Elegant Holiday Dinners | What's for Dinner?

6:45 AM 0 Comments

Welcome to a brand new What's for Dinner? video. Today I'm sharing four elegant holiday dinner ideas to ring in the festive season.

I'm leaving the printable recipes for you below. If you decide to make any of these dishes, let us know how they turn out!

Slow Cooker Rotisserie-Style Chicken This recipe is adapted from the blog, Dinner at the Zoo

Slow Cooker Rotisserie-Style Chicken

Slow Cooker Rotisserie-Style Chicken

Ingredients

  • 1 Tablespoon brown sugar
  • 1 Tablespoon paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • 1 whole chicken (4 to 5 lbs)

Instructions

  1. Mix the brown sugar, paprika, onion powder, garlic powder, salt, and pepper together and set it aside.
  2. Coat your slow cooker with cooking spray. Roll some aluminum foil into a ring and place at the bottom of the slow cooker to act as a rack.
  3. Place the chicken on top of the foil ring. Rub the spice mixture all over the chicken.
  4. Cover and cook on HIGH for 4 hours or until thermometer inserted into the chicken reads at 165 degrees or higher.
  5. Finish the chicken off in the in the oven under the broiler for 4-5 minutes or until chicken skin is brown and crispy.
  6. I made a gravy with the juices from the slow cooker by simmering it over the stove with about a tablespoon and a half of all-purpose flour and a pinch of salt. This was delicious. The chicken falls off the bone just like with a rotisserie chicken. Delish!

Sweet Potato Casserole

Sweet Potato Casserole

Sweet Potato Casserole

Sweet Potato Casserole
  • 3 large sweet potatoes, cooked (around 60 oz)

  • 1 tsp cinnamon
Topping
  • 1/4 cup melted butter
  • 3/4 brown sugar
  • 1/2 cup all purpose flour
  • 1 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 375 degrees F. Grease a 13x9 baking pan. In a stand mixer, mix the cooked sweet potatoes with the eggs, milk, brown sugar, vanilla, salt and cinnamon. Mix well, but don't over-mix. Pour this mixture in the prepared baking dish.
  2. Combine the ingredients for the topping: butter, flour, sugar and nuts. Sprinkle evenly over the sweet potato casserole. Bake for 35 to 40 minutes until the topping is brown and crispy. Enjoy!

Creamy Lemon Scallop Capellini
Creamy Lemon Scallop Capellini

Creamy Lemon Scallop Capellini

  • · 8 ounces uncooked capellini
  • · 1 tablespoon extra-virgin olive oil
  • · 1 pound bay scallops
  • · 2 tablespoons butter
  • · 3 cloves garlic, minced
  • · 2 teaspoons grated lemon zest
  • · red pepper flakes to taste
  • · ⅓ cup white wine

Jennifer's Famous Broccoli Salad
Jennifer's Famous Broccoli Salad

Jennifer's Famous Broccoli Salad

Ingredients

Salad
  • 1 lb Broccoli florets
  • ½ cup Snap peas
  • 2 stalks celery, chopped
  • ¼ Cucumber, sliced
  • 2 Scallions, chopped
  • ½ cup grapes
  • 1/4 cup walnuts
Dressing
  • ½ cup mayonnaise
  • ½ cup whole fat Greek yogurt
  • 1 ½ Tbs apple cider vinegar
  • 3 Tbs sugar
  • Salt and pepper to taste

Instructions

  1. Combine all the salad ingredients and mix. In a separate bowl, stir together all the dressing ingredients.

Date Night Surf and Turf

This one doesn't have a printable recipe as I really "winged" it. I steamed the cold-cracked lobster meat with a wedge of lemon for a few minutes until it was fully cooked. The filet mignon steaks were covered in extra virgin olive oil, seasoned with salt and pepper, and seared for around 3 to 4 minutes on each side until they were medium rare... (or in the case of what actually transpired: medium well). This was served with a side of steamed green beans, and roasted new potatoes. The lobster and steak was topped with melted Irish butter and the lobster was sprinkled with Old Bay seasoning. What a delicious dish!

Comment of the Week
Christiana writes, "You have lit a fire in my soul, Jennifer, and rekindled my love for the arts through your videos. I was on the verge of nervous collapse as a mom of 4 small children. I’d lost so much light in my eyes. Your videos have reconnected me to pursuing tiny bits of passion and beauty in my life— thanks to you I have been endeavoring to make a ritual out of the mundane: cleaning the grime off of stovetop and admiring the shine as I finish; sitting down to play the first page of Mozart’s “Rondo Alla Turca” to keep from losing my piano skill; to keeping stacks of books by my bed and reaching for books at bedtime instead of reaching for my phone. I have honed in on my personal style and now use a capsule wardrobe."

Christiana, I couldn't be happier to hear about these changes. I am thrilled that The Daily Connoisseur has been a part of your transformation. Keep going!

The Chic Assignment Season Finale

6:59 AM 1 Comments

Happy Thanksgiving and welcome to The Chic Assignment Season Finale. What a year it has been. The Chic Assignments have accompanied us through the good times and the bad, bringing us out of our reality into a different world… a world of art, music, and poetry. I thought in this year’s finale for this series, I’d explain to you why these videos are so important to me and how they can be a force for good in our lives.

The Chic Assignments have inspired me to add art to my life in many ways… one of them has been to play the piano more regularly. I’ve been practicing Johan Sebastian Bach’s Sheep May Safely Graze. I’m not the best pianist… but that’s not the point. We shouldn’t strive for perfection, but for joy. In intention is to inspire you to find the art in your everyday life.

I hope you will watch today's finale, which recaps the amazing artists we have studied and the modern musicians we have enjoyed. The Chic Assignment series will resume in February, 2022. If you have any suggestions for artists to study, please leave them in the comments.

Alexandra writes, "I'm 42 and my dream since I was 8 was to be a professional ballet dancer, I was in a car accident & was forced to pick a new dream. My whole life I couldn't let go of it & felt a sort of death from that. I took up ballroom dancing 2.5 years ago & have been slowly working on ballet & feel so wonderful now. You are so correct about the need to pursue your passion."

Alexandra, I'm so happy that you are re-discovering your passion for dance again! Wonderful!

Thank you for watching today's video. I hope you enjoyed the looks! What are some of your favorite ways to dress up for the holidays? Your comment could be chosen as comment of the week on the blog.
