Welcome to our seasonal tea party on The Daily Connoisseur. This time we are celebrating summer and you are cordially invited to join us.



I am using my treasured Victoria Magazine/ April Cornell Blue Roses Tea set for today's afternoon tea video. This tea set is so beautiful and such a joy to use. I love the study porcelain heft of the cups, yet it still looks dainty and beautiful.

On today's menu?





Let's start with the Zucchini Bread

Zucchini Bread

Yield: 2 Loaves
Prep time: Cook time: 50 MTotal time: 50 M

Ingredients:

  • 3 cups flour
  • 1 tsp salt 
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 tsp vanilla extract
  • 2 cups grated zucchini

Instructions:

  1. Preheat the oven to 325 degrees F.  Sift flour, salt, baking powder, baking soda, and cinnamon in a bowl. Mix eggs, oil, vanilla, and sugar in a mixing bowl.  Add the sifted ingredients to the egg mixture and mix well. Stir in zucchini. Pour into two prepared (greased) loaf pans. Bake for 50 minutes or until a fork comes out clean.

The Salmon Mousse Cups are a recipe from Taste of Home. You can also find the printable recipe card below.

Salmon Mousse Cups

Prep time: Cook time: Total time:

Ingredients:

For the cups
  • 3 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup all-purpose flour
For the filling:
  • 8 oz cream cheese softened
  • 1 cup cooked salmon chunks, or 1 cup canned salmon (bones & skin removed)
  • 2 tablespoons chicken broth
  • 2 tablespoons sour cream
  • 1 tablespoon finely chopped onion
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 2 tablespoons minced fresh dill

Instructions:

  1. In a small bowl, beat the cream cheese and butter until smooth. Add flour and mix well. Shape into 24 balls; press onto the bottom and up the sides of greased miniature muffin cups. (Note: we do not have a mini muffin tin, so we made 12 larger cups)
  2. Bake at 350° for 10-15 minutes or until golden brown. Cool for 5 minutes before removing from pans to wire racks to cool completely.
  3. For filling, in a large bowl, beat cream cheese until smooth. Add the salmon, broth, sour cream, onion, lemon juice and salt until blended. Spoon into the shells. Refrigerate for at least 2 hours. Sprinkle with dill.

Our Egg Salad Tea Sandwiches are very simple, yet tasty. Feel free to add whatever ingredients you like to spice them up.

Egg Salad Tea Sandwiches

Prep time: Cook time: Total time:

Ingredients:

  • 8 hard boiled eggs
  • 1/4 - 1/2 cup mayonnaise 
  • 2 tsp paprika 
  • White sandwich bread

Instructions:

  1. Mash the hard boiled eggs with mayonnaise and paprika. Add chopped sweet pickles, if desired. Spread on sandwich bread. Cut the crusts off and cut into triangles.

The pièce de résistance comes form the Perfect Afternoon Tea recipe book. Behold Sponge Cake with Strawberries and Whipped Cream

Sponge Cake with Strawberries and Whipped Cream

Prep time: Cook time: Total time:

Ingredients:

  • Cake:
  • 1/2 cup sugar
  • 3/4 cup flour
  • 4 eggs
  • Filling and topping:
  • 1 pint heavy whipping cream
  • 2 Tbs sugar (or to taste)
  • 2 cups chopped strawberries
  • Confectioner's sugar for dusting

Instructions:

  1. Preheat the oven to 375 degrees F. Beat the eggs and sugar until light and frothy. Sift the flour over this mixture and fold in with a metal spoon until incorporated. Pour into a greased and floured 8 inch round cake pan and bake for 30 minutes, or until the sponge feels springy to the touch. 
  2. Let the cake cool slightly and then loosen the sides with a knife and release onto a cutting board. Slice the cake through the center to create equal halves. 
  3. Meanwhile, make the whipping cream by mixing the heavy cream with sugar in a mixing bowl. Mix until stiff peaks form. Spread half of the whipped cream on the first layer of cake. Top with strawberries. Add the top layer of cake and repeat by adding whipping cream and topping with strawberries. Finally, dust confectioner's sugar over the top.

It might seem a little late to be talking about New Years goals, but I’m of the mindset that goals can and should be set at any time and that you don’t need a big reason to start something new. A couple weeks into January, I realized that I hadn’t really given any thought to my goals for the year. With a newborn, it wasn’t surprising to me. Since this year is going to be very different, in terms of free time, in the beginning versus the end, I decided that I wanted to have one focus each month of this year, instead of a few goals for the entire year. This way, I can dedicate more energy to my goals in the months that are less full. My goal for January is rest. Sometimes it is really hard to truly rest, especially when you need it. I’ve been reminding myself to accept help when it is offered, to ask for help when it is needed, to choose to rest instead of pursue a hobby or passion (knowing that I will be able to fulfill those desires again soon), to let those I love take care of me instead of always taking care of others, to sleep when I have the opportunity, and to cherish these early days being a mom to two beautiful girls. Like all the other books I buy her, it went into another part of the house, probably never to be seen again by her (no offence)...or so I thought. As I ventured out into my place of solitude, which happens to be my backyard these days, I decided to grab a book from that shelf in the other part of the house. Sitting quite comfortably in my cozy chair with the book about to open, I can honestly tell you that I didn't leave that spot until I finished reading the entire book! I couldn't stop!! It's like I went with you on your journey to Paris and although I've always been one to enjoy the finer things in life, you actually made me realize that I still need to continue to pamper myself and enjoy every aspect of my wonderful life, thus far. When I finished the last page, I immediately went right up to my daughter and handed her the book telling her she must read it. She's starting tonight and I can't wait to sit down with her, in our little backyard paradise, drinking lemonade, and conversing with each other about the wonderful contents of those pages! To now sit down at my computer and look up your YouTube channel and watch your video's, makes me now feel like I'm still on some type of wonderful journey with you. The feeling that you get when you take a big blanket out of a hot dryer on a cold winter day....that's the feeling and warmth I get from watching your video's. You are such a wonderful human being and quite the mentor to many of us ladies out here. I'm sure my daughter will feel the exact same way I do once she's completed your book. Thank you for being such a special addition to my life and my daughter's life....I'm sure she'll thank you one day too!!! 💖💖"

Homemaking Week in the Life | Homemakers Should Have Fun Too

Welcome to a new homemaking week in the life. Often homemakers are the most work-laden members of the household. Sometimes it seems that while everyone else is having fun, we are dealing with drudgery and our work never seems to end.



But homemakers should have fun too. We need to remember to take regular breaks from our work in order to keep our spirits up... little pockets throughout our day. That might manifest in a late breakfast in our pajamas one Saturday, or an afternoon interlude in the garden. It might show up as a quiet moment to paint our nails or a cheeky jump in the pool. All of these moments you will see in today's video, along with much, much more.

My homemaker series is created to give you encouragement in your daily tasks. You are not alone... and homemaking is remarkable.

Sisyphus
Housework can be repetitive,
Constantly setting things to right.
It’s at once satisfying and tedious,
This is the homemaker’s plight.

Just as Sisyphus rolled the boulder,
It feels we have done this before.
The tide inevitably rolls back,
Then washes up on the shore.

But unlike Sisyphus, the jobs we do,
Are meaningful at worst.
At best they are the stuff of life,
So let us dive in headfirst.
